Graduate Chefs Showcase a decade of delectable delights

Alumni chefs from The University of Akron’s hospitality management program will present eight courses of culinary delights at the annual Graduate Chef’s Dinner Saturday, April 5. The event begins at 5:30 p.m. with hors d’oeuvres including risotto canapés and smoked salmon brochettes, followed by lobster bisque and chicken and waffles with Ohio maple syrup and bacon. The event, which takes place at UA’s Crystal Room Bistro in Gallucci Hall, 200 E. Exchange St., also includes a wine pairing for each course provided by the Winery at Wolf Creek.

Dinner begins at 6 p.m. and features entrees including pecan-crusted tilapia with creole meuniere; curry fried chicken with confetti quinoa and braised root vegetables; and lamb. Sorbet ice figurines by gold medal ice carver Aaron Costic ’91 highlight each course. Other menu items include a salad made of kale, brussels sprouts, pork rillettes, bacon, crostini and pickled scallions tossed with thyme vinaigrette and mango strudel with vanilla anglaise and lime syrup with coconut tuile for dessert.

Admission is $50 per person. Proceeds help fund educational events and activities for members of the UA Culinary Arts Club (formerly the Garde Manger Club), celebrating its 10th year. Reservations are available by calling 330-972-6615.
